I hope everyone is keeping warm! It's been pretty cold here in Manitoba the last week or so, but it hasn't slowed us down one bit. In fact this weekend was full of birthday celebrations and lucky me, my birthday fell on a holiday this year! Yesterday was Louis Riel day in MB - for those of you not up to snuff with your Canadian history, Louis Riel was the guy who helped Manitoba become Canada's 5th province way back when.
My sister-in-law and I share a birthday (crazy coincidence) and my father-in-law is born the day after. Friday night consisted of a sleigh ride in our nearby national park and a big fancy dinner with my in-laws. Saturday consisted of party planning for a big birthday bash (which even included a special baking delivery from my mom and granny). Sunday I hosted a Roarin' 20s themed birthday party, and yesterday was mainly clean-up, movie watching, and resting. All-in-all it was a fantastic weekend, but one thing that definitely got put on the back-burner was well rounded nutritious meals! A few extra glasses of wine and lots of treats was great for celebrating my birthday but I know that I need to eat a few extra veggies this week! Often when we think of eating veggies, we think of salads, which can quite frankly be very boring. I'm always looking for new salad recipes - ones that are 'razzle dazzle delicious' and pretty enough to serve to company. Well this Razzle Dazzle Raspberry Salad is definitely a new favorite and was inspired by my mother-in-law who introduced me to this salad's secret ingredient .... cranberry cinnamon goat cheese. I'll say that again - CRANBERRY. CINNAMON. GOAT CHEESE. Could anything be more amazing? Even if your not a fan of traditional goat cheese, this one is definitely a tasty treat! I found it at my local Sobey's but you may find similar variations at other locations as well. The unique homemade salad dressing is a nice touch as well!

Salad greens (baby romaine or spring mix)
1/4 cup pecans
2 Tbsp Compliments cranberry cinnamon goat cheese
1/2 cup fresh or frozen raspberries
1/2 cup canola oil
1/4 cup vinegar
1 tsp cinnamon
1/2 tsp nutmeg
1) Combine all salad ingredients.
2)Combine all dressing ingredients until there are no large raspberry pieces remaining. Give it a taste, if its too tangy add a little extra oil. If it's not tangy enough add a little extra vinegar.
3)Drizzle dressing over salad mix and toss until well coated.

Here's a few pics from the Roarin' 20's birthday party this weekend! The 'food theme' was finger foods - trail mix, tiny cookies, popcorn, chocolates, mini cream puffs, veggies and dip, cheese and crackers.... anything munchy that didn't require cooking! haha. I wanted to have everything set up so I could enjoy the party without having to watch over the stove all night and it turned out great. What's your favorite food to serve at a party?
