So it was a long weekend this weekend and in true Manitoba fashion ... it snowed. Yes, that's right. For all of you non- Manitobans out there, our province is known for it's especially special weather. There was a full on legit blizzard happening here on Sunday and by Monday evening I went for walk with my husband and lil' Lou in capris and a light sweater. Talk about bizarre. Luckily, the bachelor party that happened here on Saturday had pretty nice weather until much later in the evening when the rain started to come down. You heard that right too - there was a bachelor party in my garage this weekend. Luckily it was pretty tame and the groom (a longtime close friend of my husband and I) actually dragged me into the garage later that evening, since as he put it 'Whitney you're one of the guys.' Well, actually they decided that 'Walter' or 'Wally' was the male version of the name Whitney and I was not about to argue. All-in-all it was a great long weekend, despite the not-so-great weather.
One thing that prepping for a bachelor party (and cleaning up after) will do to ya, is make you NOT want to cook for the rest of the weekend. In fact, we mostly ate leftovers and snacks and watched a lot of TV in order to relax and unwind as we watched the snow fall.
Now one of the all time favorite snacks in our house is of course ... popcorn! I love the smell of popcorn but after a few handfuls I've usually had my fill. My husband on the other hand, could eat popcorn once a day, everyday. I used to buy microwave popcorn for him all the time but found A) it was expensive and B) you can't control the ingredients in it ... and it often has a LOT of ingredients. To be honest, I'm not sure where the original idea came from (pinterest probably), but I am going to show you why you NEVER have to buy microwave popcorn again. Not only is it a money saver, but it is ultimately much more nutritious.
Ingredients in a leading brand of popcorn: whole grain popcorn, partially hydrogenated soybean oil, salt, natural and artificial flavor [milk], color added, freshness preserved by propyl gallate
Ingredients in WHITTY NUTRITION popcorn: POPCORN
The best part about this witty way to make popcorn? It's so easy I almost feel silly writing a post about it. Maybe many of you have heard of this and do it already - if so, I will try to come up with something much more exciting next week to wow you all (suggestions always welcome)!
As always, get what you need first, which will be popcorn kernels, a brown paper bag, and whatever seasonings your heart desires. In this case, I just made the simplest form of popcorn with a little oil and salt.
Taco Popcorn: a drizzle of olive oil + a sprinkle of taco seasoning
Cheesy Garlic Butter Popcorn: melted butter + garlic powder + a sprinkle of parmesan or shredded sharp cheddar (add when popcorn is still piping hot)
Faux Cheese Popcorn: melted butter or olive oil + nutritional yeast (tastes like cheese!)
Chocolate Popcorn: stir in some mini semi-sweet chocolate chips while popcorn is still hot. Caution - this can get a bit messy!!
Caramel Popcorn: a classic favorite - keep the serving size small with this one! Try THIS caramel recipe from Averie Cooks. I found it on pinterest and have used it a few times to make caramel popcorn. Delish!
