It's been a crazy week - well month, and I've been losing track of what day it is for a while now! That's the blessing and the curse of working for yourself. You get to work when you want but sometimes that means All. The. Time. and so it's hard to know if it's a weekday, weekend, day or night sometimes!
Sorry I missed the Monday deadline this week but I had a few minutes so I thought I would quickly share with you a recipe I often make in busy times, like the past few weeks have been! Now, not everyone likes salad. In fact, I know quite a few people that hate it. Not this salad though... pasta salad is one of my favorite things ever. It's got everything you need - carbs, protein, healthy fat, and it can be altered to suit anyone's taste. I make many variations of this based on whatever I have in the house, so the recipe I provided here is the most basic version of my pasta salad but don't let that limit you! If my husband takes this to work he'll often throw in a can of tuna or chicken for some extra protein, sometimes I'll toss in a can of beans to make use of the goodness of meat alternatives, and you can even add lentils, or other vegetables depending on what you like.
The best things about this recipe are that it can be customized, can fit your budget, and is delicious and nutritious at the same time! Follow these simple steps and you'll have dinner and lunches for days ... did I mention the longer this salad marinates in the homemade dressing the better it tastes?!
